Blueberry sour cherry syrup

Easy peasy pancake or waffle sauce.
Nuke one cup of fresh blueberries with 1/2 cup of sour cherries (or pickled cherries, regular cherries, etc) and 1 TBSP of brown sugar (or molasses).  This should be in the microwave at 80% for three minutes.  Pour into blender and pulse several times until blended.  Voila!  Instant breakfast (or even dessert) syrup.  This also works really well with frozen fruits.

Vegan Mac n Cheeze

Sometimes, I just really crave comfort foods. Macaroni and cheese is one of them. Now, the typical way my mom used to make mac n cheese was with three different types of cheeses, bacon, and the breadcrumb topping. This dish was then baked to create it’s yummy goodness.
Now, this recipe is not baked.. and I don’t know if this would be great as a baked mac n cheese. However, this dish is so very yummy. I kept eating out of the saucepan while it was hot, instead of waiting to eat at the table with the sidekick.
I know that many people have a certain idea in their heads of how mac n cheese is supposed to taste like. I think that this is the closest thing to the blue box mac n cheese.

Vegan Macaroni and Cheese
1 pound elbow noodles or whatever is on hand
1/4 c vegan margarine
1/3 c spelt flour
4 cups unsweetened veg milk
2 cloves garlic, crushed/minced
1 1/2 c nooch (nutritional yeast)
1 1/2 T tomato paste
1 tsp table salt
1/2 c peas/carrots/green beans frozen veggies combo or frozen broccoli

In a large stockpot, cook the noodles until al dente (about 10-12 minutes). I used the Whole Foods spinach/veggie multicolored shells one.
In a saucepan, melt the margarine and cook until a little bit browned on medium heat. Then add the flour and cook this until browned.
Next, add the milk, nooch, and tomato paste. Whisk until thoroughly combined.
Let simmer and then add salt to taste. I added just a tsp of table salt, but you can add more or less to your desire.
Then, drain the pasta well and add to this cheeze mixture. Then add the peas/carrots/green beans frozen vegetable mix and let it all heat up thoroughly.
Sprinkle with more nooch on top and enjoy!
